why does a black Cast Iron wood stove turn white?

Black cast is usually not truly black. In most part it is due to the heat resistant paint they put on the unit to make it look black.
As the unit heats, it expands and so does the exterior paint. The paint cracks, and eventually it begins to show color.
You can refurbish by using spray paint made for grills and other hot things. Just make sure you mask off the space around it to avoid splatter. In extreme exterior paint cracking cases, you may want to use some steel wool to tone down the edges of the cracks before spray painting it. It should look good for a season, then it will go the same way as before, similar to outdoor grills that begin to discolor after usage.
